Veggie Fajitas

Serves 1-2 persons

Ingredients

For Vegetable Plate

Broccoli (cut into desired size) - 70g

​Carrots (peeled and cut into desired size) - 70g

​Shiitake mushrooms - 6 slices

​Snow peas (stem removed) - 6 nos

​Butter mixed with herbs of choice - 30g

​Onions (peeled and cut into desired size) - 60g

​Bell peppers (Deseeded and cut into desired size) - 120g

​Vegetable or Olive oil - 30ml

For Pico De Gallo

Tomato (ripe but firm) - 1/2 nos

​Onion - 1/2 nos

​Coriander - As desired

​Salt and Pepper - As desired

For Guacamole

Ripe Avocado - 1 nos ​Onion - 1/2 nos

​Lime (juiced) - 1/2

​Salt and Pepper - As desired

Additional condiments

Shredded cheese - 1/2 cup

​Shredded lettuce - 1/2 cup

​Sour cream - 1 tblspn

​6 inch tortilla wrap - 4 nos

Steps

Step 1: Prepare all the ingredients above.

Step 2: Prepare Pico De Gallo: Dice tomato, onion and chop coriander. Add all ingredients to a bowl, mix well and season it with salt and pepper.

Step 3: Prepare Guacamole by gently mashing avocado and mixing with finely chopped onions. Season with salt, pepper and lime juice.

Step 4: Steam all the vegetables (broccoli, carrots, shitake mushrooms and snow peas) until cooked (while maintaining a crunch). Remove and place on the side. Separately, add herb butter and oil to frying pan, heat and sauté raw onions and bell peppers.

Step 5: While your items in step 4 are cooking, plate your condiments on a plate (Pico De Gallo, Guacamole, Lettuce, Cheese and Sour Cream).

Step 6: Warm up the tortilla wraps.

Step 7: Once onions and bell peppers (Step 4) are cooked, mix together with steamed vegetables and place on a separate plate or bowl.

Step 8: Stuff warm tortilla wraps with fillings of choice from the vegetable platter and condiments plate. Enjoy!

Inspired by his mother's cooking, Malaysia born and bred Chunman Lai's childhood ambition was to be a chef. He joined Hard Rock Cafe Singapore as a Commis Cook in 2006 rose through the ranks, and currently he heads the kitchen of Hard Rock Cafe Sentosa as Head Chef. With 15 years of experience in Hard Rock Cafe, Chef Chunman specialises in American Classics such as burgers, sandwiches, ribs, steaks and desserts. Strongly believing that food connects people as well as nourish the body, Chef Chunman takes immense pride in his cooking, adding passion, enthusiasm and love as his own secret ingredients.
