Sweet Potato Brownies (Vegan, Gluten-free, Diabetic-friendly) - Shared by Yonah

- 350g cooked sweet potatoes - 6.5 tbsp oats - 6 tbsp aquafaba (bean water) - 1/8 tsp monkfruit/stevia extract - 50ml coconut oil | - 1 tsp vanilla extract - 1 tsp salt - 1/2 tsp baking powder - 3 tbsp + 1 tsp cacao powder |
Steps |

Combine dry ingredients (sweet potatoes, oats, monkfruit, salt, baking powder & cacao powder) and mix well. Add in wet ingredients (aquafaba, coconut oil & vanilla extract) and mix well. Transfer to oiled glass pan. Tent with aluminium foil. Bake at 177 degree celsius for 35 mins. Remove foil at 17 mins mark and continue baking till done.
