Seared Marinated Prawn Salad

Ingredients for salad
Vegetable oil – 80ml |
White cabbage, shredded finely and soaked in iced water – 50gm |
King mushrooms, sliced – 80gm |
Red cabbage, shredded finely and soaked in iced water – 50gm |
Avocado, cut into wedges – 1 nos |
Chilli flakes – 1 tsp |
Medium sized prawns – 120gm to 150gm |
Lime juice – 1 tbsp |
Ingredients for dressing
Extra virgin oil – 25ml |
Chopped garlic – 5gm |
Chopped coriander – 1 tsp |
Chopped bird’s chilli – 1gm |
Cherry tomato, cut in halves – 25gm |
Pomelo pulp (or any citrus fruit) – 80gm |
Pomegranate – 20gm |
Lime juice – 1 tbsp |
Honey – 1 tsp | |
Steps
1. Marination: Remove shell and devein the prawn and place in bowl. Add chilli flakes, lime juice and season. Keep in chiller for 10 minutes.
2. Dressing: Place all ingredients in bowl, mix well and keep aside.
3. Method: Heat pan, add oil and sear the prawns evenly. Add mushroom and avocado. Cook on high heat until prawns are cooked and leave to rest. Season with salt and pepper.
4. Assembly: Pat dry cabbage with paper towel. Place the cabbage on a plate and plate the remaining ingredients. Drizzle dressing and serve immediately.
About the Chef
Culinary trained in Westminster College, London, Chef James Francis started his career in Genting Highlands, where he clinched the coveted Best Restaurant in Malaysia in 1998. He then returned to the U.K and started working in the hospitality industry where he rose to the rank to Executive Chef with his passion and talent.
With a smile, he shares what makes his style special: "I believe my team cooks from the heart and that makes food special; and that's why our mothers' cooking can be so simple, yet tasty and comforting,". He holds the highest standards for his cooking, for instance, he lays down a no-MSG rule within the restaurants. Also his insistence on making his own stock instead of using off-the-shelf options ensure that your tastebuds are well pampered!
