Ingredients

​Kailan - 500g

​Wasabi

​Japanese Soy Sauce

​Ice

Steps

1. Wash kai-lan thoroughly. Peel away outer fibrous layer of kai-lan if desired. Prepare a bowl of iced water (big enough to hold all the kai-lan).

2. Bring a pot of water to boil. Place kai-lan in boiling water for 1 minute and remove immediately

(Chef's note: This is important so that the vegetable is not overcooked and retains its' crunchiness)

3.  Place kailan into bowl of iced water.

4. Once kailan is cooled, plate (optional : on a bed of ice) and serve with wasabi and soy sauce.

Chef's note: The wasabi and soy sauce are important! Don't skimp on these! This preparation method is also suitable for other vegetables, so experiment with your favourite veggie!

About the chef


Hailing from Malaysia, Chef Ricky previously trained under a Michelin-starred chef in the art of classic Cantonese cuisine. Since taking over as the Executive Masterchef at Peony Jade @ Keppel Club, he has continually pushed the boundaries of fine Cantonese dining.

Prior to his current appointment, he had stints at notable establishments like Lei Garden, Crystal Jade and Mouth Restaurant. He joined the Quayside Group in 2009, and his classic Cantonese background puts him right at home in Peony Jade, where the focus is on no-frills, classic Cantonese cuisine.
