Baked Vegetables - Shared by Barbara Lina Lei 

Ingredients

​Use any vegetable you can imagine!

​Any combination of herbs and spices!

​Black pepper

​Salt

​Olive oil

Steps

1. Toss vegetables, herbs, spices, black pepper, salt and olive oil well.

2. Pop into the oven at 200 degree for 30mins.

3. Serve! It's as simple as that!

Single mom here with a 21-year-old and an 11-year-old, we used to be renting room to room islandwide for 7+ years. When we got our BTO 2 room flat 2+ years ago, we finally had our very own kitchen and this is one super simple, easy and minimal cleanup recipe that most veggies can be used. We try to eat a rainbow of colors in the veggies, just add olive oil, salt and pepper as the base and topped with herbs and spices that we rotate. A healthy, delicious meal on its own or with fave brown rice / pasta / couscous / quinoa etc. I am by profession a holistic health practitioner, a certified Aromatherapist.
