Baked Salmon with Quinoa - Shared by Paige See
INGREDIENTS |
Salmon (500g) 2 nos Broccoli 1 spear Dried mixed herbs 1/4 tspn | Quinoa 1/6 cup Garlic pepper seasoning 1/4 tspn Olive oil |
Steps
1. Preheat oven to 170 deg Celsius.
2. Wash quinoa, add 1:2 ratio of quinoa:water in a pot. Bring it to a boil, then lower the fire and simmer for 10-15 minutes until water has been absorbed.
3. Scale and wash salmon slabs, place it in a bakeware or on an aluminium foil. Cut broccoli into smaller florets (even the stalk is edible), wash and spread it out around the salmon. Sprinkle the herbs, then the quinoa. Top it up with a drizzle of oil.
4. Pop it into the oven, bake at 170 degree Celsius for about 25-30 minutes.
Your dish is ready to be served!

I chose to share this recipe because it is low in carbs and sodium, high in protein, fibre and iron. It is so easy to play around with the ingredients and flavours. We would offer the same food to our girl who has started solids.
