Egg pancake roll (10-minute preparation time)

Breakfast is the first important meal to start the day. Although it is a meal with the least portion compared to lunch and dinner, breakfast is crucial for seniors.

Busting with flavour, the egg pancake roll makes the perfect savoury breakfast. It is easy to prepare and healthy for the elderly due to its soft texture.

Though relatively small in size, eggs are packed in nutrition and can be an important staple in a well-balanced diet.

Eggs are good source of protein which the elderly require to maintain their muscles. Eggs also provide Vitamin B12 and iron which are crucial for red blood cell production.

“In general, seniors are encouraged to include eggs in their diet as part of a healthy meal unless as advised by their doctors, said Edward Chan, Senior Dietitian from SingHealth Community Hospitals (SCH), a member of the SingHealth group.

However, Edward also shared that the key is to eat eggs in moderation and recommended to keep it to two or three eggs per week if you have history of stroke or cardiovascular diseases. If you are allergic to eggs, you can substitute them with soy milk which has high calcium, proteins and minerals.

And when preparing the dish, Edward advised to cook the eggs well before consuming to prevent food contamination.

Last but not least, in order to make the recipe more appetising, you can add vegetables such as capsicum or tomato for a dash of colour and additional fibre content!

Ingredients and preparation steps

Ingredients (for 4 servings)

3/4 cup of all-purpose flour (100g)

​1 and 1/3 cup of water (325ml)

​1 cup of chives, chopped

​1/2 teaspoon of salt

​1/5 cup tapioca flour (25g)

​4 tablespoon of olive oil

​4 eggs

​2 slices of cheddar cheese (optional)

Steps

1. Mix the all-purpose flour, tapioca flour and salt evenly in a big bowl.

2. Pour water into the mixture to form a batter. Sieve the batter to remove any residue.

3. Add the chopped chives into the batter and stir well.

4. Heat the olive oil in a frying pan and add one ladle of the mixture into the frying pan at one time. Pan-fry the mixture until one side is light brown.

5. Crack an egg onto the pancake and flip to the other side.

6. Place ½ slice of cheese onto the pancake and roll it into a pancake roll.

7. Serve warm.
