​Baked Vegetable Cutlets

​Ingredients:

  • 80g mixed vegetables
  • 1 dried Chinese mushroom, soaked to soften and finely chopped
  • coriander leaves, chopped
  • 200g potatoes, cooked and mashed
  • ½ tsp canola oil
  • ½ tsp sesame oil
  • 1 slice ginger
  • pinch of pepper
  • ¼ tsp salt
  • 1 tsp cornflour

SERVES Two
40 minutes to prepare.

Method:

  • Heat oil in a pan. Add sesame oil and ginger. Fry until fragrant. Discard ginger.
  • Add mixed vegetables, mushroom and coriander leaves, fry well.
  • Add mashed potatoes. Season with pepper and salt. Cool to room temperature.
  • Divide mixture into 8 portions. Shape each portion into a cutlet.
  • Sprinkle cutlets with cornflour and grill in oven until golden.
