Panzanella Salad

Ingredients

Ciabatta bread 50g

​Lemon juice 50g

​Basil 10g

​Extra Virgin olive oil 10g

​Thyme 5g

​Honey 10g

​Salt 2g

​Crushed black pepper 1g

​Heirloom Tomato 100g

​Cherry Tomato on Vine 50g

​Cucumber 30g

​Bell pepper 20g

​Taggiasche olives 20g

​Capers 5 pcs

​Red onions 20g

​White vinegar 100ml

​Water 1 litre

Steps

Croutons: Cut ciabatta bread into small cubes of about 1.5cm width and toast till golden brown.

Dressing: Blend lemon juice with basil, extra virgin olive oil, thyme, honey, salt and black pepper.

Pickled onions: Slice red onions and boil in water and white vinegar for 30 minutes.

Slice heirloom tomatoes, cherry tomatoes on vine, cucumber, and bell pepper. Once done, toss together with olives, capers and dressing.

Add croutons, basil leaves and pickled red onions to garnish.

An Italian native, Chef Alessandro Delle Cave helms the Trapizza kitchen, bringing authentic flavours of Italy to the table. Chef Alessandro sharpened his knives and senses in various Italian establishments around Italy, Sydney and Singapore.

Chef Alessandro imports premium ingredients from Italy, as his cooking philosophy stems from his belief in using authentic and fresh ingredients to create the right flavours. With pasta and risotto as his specialty, he has elevated the flavours of his signature items and conceptualised dishes reminiscent of those from his hometown of Turin.

Part of Shangri-La's Rasa Sentosa Resort & Spa, Trapizza is well-loved by families, island visitors and resort guests for its hearty, authentic Italian fare and relaxing seaside vibes. Inspired by architecture in Palm Springs, the decor features cacti landscaping, palm trees and statement furniture creating a rustic, laid-back atmosphere.
