Healthy Chicken Rice - Shared by Kathy Lam

Ingredients

Water - 1 cup

Goji berries - 6g

Red dates - 5 nos

Brown rice - 1 cup

Chicken thigh - 300g

Raw peanuts (peeled) - 60g

Light soy sauce - 6 tblspn

Steps

  1. Soak the peeled peanuts in a bowl of water overnight

  2. Remove any excess fat from the chicken thighs, then rinse well with tap water. Marinate the chicken thighs with light soy sauce and set aside

  3. Wash the goji berries, red dates, and rice

  4. Put the rice and water in a rice cooker and then add the goji berries, red dates and peanuts into the rice cooker. Place marinated chicken thighs on top.

  5. Switch on the rice cooker, start the standard rice-cooking mode and wait for it to cook.

  6. Voila! Now you can enjoy yummy hearty chicken rice!

When I have the chance to be at home, I like cooking healthy food by myself. I like trying new recipes, and I mostly get my ideas from my mother, my friends, magazines and YouTube.
