Hearty Carrot Celery Soup - Shared by Kum Soon

Ingredients

300g carrots diced​500ml water or vegetable stock
​180g celery diced​100ml heavy cream
​125g white onion diced​1/2 tsp salt or to taste
​50g butter

Steps

  1. Chop and dice carrots, celery and onion.

  2. Over stove on high heat, melt butter in a soup pot.

  3. Add onion and fry until the onions just turn brown or translucent.

  4. Add carrot, celery and water and bring to boil.

  5. Turn to medium heat, boil for 25 minutes.

  6. Bring pot of soup to flat surface and mash the vegetables with potato masher.

  7. Add heavy cream, stir and bring to boil again.

  8. Serve hot.
